Matcha Pancakes

Fluffy matcha pancakes with a soft, lightly sweet flavor and a beautiful green tea color. Perfect for a cozy breakfast or brunch, they’re delicious served with maple syrup, fresh fruit, or whipped cream.


Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 tablespoon matcha, sieved, plus more for sprinkling
  • 1 teaspoon baking powder
  • 3/4 teaspoon kosher salt
  • 1/2 teaspoon baking soda
  • 1 large egg, lightly whisked
  • 1/2 cup whole milk
  • 1/2 cup whole milk Greek yogurt
  • 2 tablespoons unsalted butter, melted, plus more for cooking
  • 1/2 teaspoon vanilla extract
  • Powder Sugar for sprinkling


Instructions

  1. Whisk the flour, sugar, matcha, baking powder, salt, and baking soda in a bowl. In a separate
    bowl whisk the egg, milk, yogurt, butter, and vanilla. Add the dry ingredients to the wet
    ingredients and stir to combine without overmixing.
  2. Heat a skillet over medium heat. Melt 1/2 tablespoon butter in the pan. Drop heaping spoons
    of the batter into pan and shape into 3-inch pancakes.
  3. Cook the pancakes until golden brown on both sides and cooked through, flipping once,
    about 4 minutes. Serve sprinkled with Matcha Powder Sugar and sieved matcha.

  • Makes 8 (3-inch) pancakes
