Matcha Pancakes
Matcha pancakes are fluffy breakfast treats infused with vibrant green matcha powder for an earthy, slightly bitter flavor and natural green hue.
Fluffy matcha pancakes with a soft, lightly sweet flavor and a beautiful green tea color. Perfect for a cozy breakfast or brunch, they’re delicious served with maple syrup, fresh fruit, or whipped cream.
Ingredients
- 1 cup all-purpose flour
- 2 tablespoons granulated sugar
- 1 tablespoon matcha, sieved, plus more for sprinkling
- 1 teaspoon baking powder
- 3/4 teaspoon kosher salt
- 1/2 teaspoon baking soda
- 1 large egg, lightly whisked
- 1/2 cup whole milk
- 1/2 cup whole milk Greek yogurt
- 2 tablespoons unsalted butter, melted, plus more for cooking
- 1/2 teaspoon vanilla extract
- Powder Sugar for sprinkling
Instructions
- Whisk the flour, sugar, matcha, baking powder, salt, and baking soda in a bowl. In a separate
bowl whisk the egg, milk, yogurt, butter, and vanilla. Add the dry ingredients to the wet
ingredients and stir to combine without overmixing. - Heat a skillet over medium heat. Melt 1/2 tablespoon butter in the pan. Drop heaping spoons
of the batter into pan and shape into 3-inch pancakes. - Cook the pancakes until golden brown on both sides and cooked through, flipping once,
about 4 minutes. Serve sprinkled with Matcha Powder Sugar and sieved matcha.
